If you just happen to have some leftover buttermilk in your refrigerator, this is what you need to do! Make these AMAZING Double Chocolate Buttermilk Muffins and your life will be complete!!! Oooohhhhh, how I love these muffins!! The added chocolate chips on top make these muffins incredible! They will definitely be on my “must have chocolate for breakfast” list from now on!
- 1/3 cup vegetable oil
- 1 cup buttermilk
- 2 eggs
- 1 tsp. vanilla
- 1/2 tsp. salt
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1/2 cup cocoa powder
- 2 cups flour
- 1 cup chocolate chips (plus one additional cup to top muffins with)
- Mix ingredients in order
- Fill muffin cups ⅔ full
- Top batter with additional chocolate chips (see photo above)
- Bake at 350 degrees for 18-20 minutes and mini muffins 8-10 minutes
