Chocolate Peanut Butter Lava Cakes

Note: I am not posting “how to” photos for this post since I have posted the Ehow.com video that I shot for this recipe below!

Ingredients:

  • 4 squares of Bakers Semi-Sweet Chocolate Squares OR 12 Tbsp of Semi-Sweet Chocolate Chips
  • 1/2 cup butter (1 stick)
  • 1 cup powdered sugar
  • 2 whole eggs
  • 2 egg yolks
  • 6 Tbsp flour
  • 4 oz cream cheese (softened)
  • 3 Tbsp peanut butter
  • 2 Tbsp brown sugar
  • 1/4 tsp vanilla
  • Whipped topping and garnish (optional)

Directions:

  1. Preheat oven to 350 degrees. Spray Souffle dish or baking dish with cooking spray and set aside.
  2. Place chocolate and butter into a medium sized bowl and microwave for 1 to 1-1/2 minutes until chocolate is almost melted; then whisk chocolate until completely melted
  3. Add in powdered sugar and stir until fully incorporated
  4. Whisk in eggs and egg yolks
  5. Stir in flour until moistened
  6. In another bowl beat cream cheese, peanut butter, brown sugar and vanilla until creamy
  7. Pour half of the chocolate batter into the prepared dish
  8. Spoon peanut butter mixture over the top distributing evenly
  9. Top with remaining batter
  10. Bake for 20 minutes until the edges are set, but center is still soft. Cool slightly and top with whipped topping if desired; Serve warm

* Note: I made mine in 6 small souffle cups and baked them for 14 minutes at 425 degrees
