Baking with Melissa: Butterscotch Pudding Cookies

If you like Butterscotch, these Butterscotch Pudding Cookies are delightful and very easy to make! Check out the recipe below!


  • 2 sticks of butter (softened)
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 tsp pure vanilla extract
  • 3 cups all purpose flour
  • 1 small package of instant butterscotch pudding mix (dry mix)
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 cups butterscotch chips

  1. Preheat oven to 350 degrees and line baking sheets with parchment paper for easy release
  2. In a large bowl cream together butter and sugars until well combined
  3. Add in eggs and vanilla and mix until combined
  4. Add flour, pudding mix, baking soda, and salt and mix until combined
  5. Stir in butterscotch chips
  6. Using a medium cookie scoop place dough on cookie sheet about 1 inch apart and bake 10-12 minutes. Makes 4 dozen cookies. Note: If using a small cookie scoop (for mini cookies); bake for 8 minutes
  7. Cool on cookie sheet for 10 minutes before transferring to a wire rack to cool
